HONGKONG CHICKEN PORRIDGE
Ingredients :
- Style 1 tsp salt -
- 1 tsp sesame oil -
- 250 grams of chicken meat, cut dice -
- 2 tbsp cooking oil -
- Garlic 4 cloves, finely chopped -
- Rice 200 grams -
- Water chicken broth 2 ½ lt -
- ½ tsp pepper powder -
- ½ tsp Salt -
Complement :
- 5 chicken eggs grains -
- Cakwe 5 fruit, sliced finely -
- 5 tsp tongcay -
- Onion fry 5 tsp -
- Celery leaves chopped 5 tbsp -
- Salty-Style -
- Chilli sauce -
How to prepare :
1. Mixed chicken, sesame oil and soy sauce salty. Stirred evenly.

- Daging ayam 250 gram, potong dadu –
- Minyak goreng 2 sdm –

- Beras 200 gram –
- Air kaldu ayam 2 ½ lt –
- Merica bubuk ½ sdt –
- Garam ½ sdt –
Pelengkap :
- Telur ayam 5 butir –
- Cakwe 5 buah, iris halus –
- Tongcay 5 sdt –
- Bawang merah goreng 5 sdt –
- Daun seledri cincang 5 sdm –
- Kecap asin secukupnya –
- Saus sambal secukupnya –
Cara membuat :
1. Campur ayam, minyak wijen dan kecap asin. Aduk rata dan sisihkan.
2. Panaskan minyak, tumis bawang putih hingga harum. Masukkan beras, aduk rata selama 3 menit, angkat dari api.
3. Panaskan air kaldu, masukkan tumisan beras ke dalalmnya. Masak sambil diaduk hingga menjadi bubur.
4. Masukkan daging ayam, merica bubuk dan garam, aduk rata. Angkat.
5. Pecahkan 1 butir telur pada dasar mangkuk, tuangkan bubur panas – panas. Taburi atasnya dengan cakwe, 2 sdt tongcay, 1 sdt bawang merah goreng, dan seledri.
6. Sajikan dengan kecap asin dan saus sambal bila suka.
Tips : Telur dapat digoreng ½ matang tersendiri dan disajikan di atas bubur.

MANADO PULP (Titonuan)
Ingredients :
- Rice 100 grams -
- Water 100 lt chicken broth -
- Sweet corn ½ head, take the seeds -

How to prepare :

Bahan sambal terasi :
- Cabai rawit 1 buah –
- Cabai merah 3 buah –
- Terasi ½ sdt, bakar –
- Bawang merah 1 ½ buah –
- Tomat ½ buah –
- Gula pasir secukupnya –
- Garam secukupnya –
- Minyak goreng 2 sdm –
Cara membuat :
1. Sambal terasi : Panaskan minyak, goreng cabai merah, terasi, cabai rawit, bawang merah dan tomat. Masak hingga layu. Angkat, haluskan semua bahan bersama garam dan gula pasir.
2. Rebus beras dengan air kaldu, masak hingga menjadi bubur.
3. Masukkan jagung, masak hingga setengah matang. Lalu masukkan labu, masak hingga jagung dan labu matang. Masukkan sayur-sayuran, bumbui dengan garam. Masak hingga seluruh bahan matang.
4. Hidangkan bubur manado dengan sambal terasi dan ikan asin.
Tips :
- Labu kuning dapapt diganti dengan ubi jalar manis –
- Daun bayam juga dapat diganti dengan kangkung –

How to prepare :

Taburan :

- Jahe cincang 1 sdt –
- Serai 1 batang, ambil bagian putihnya, iris halus –
- Ikan kakap putih 150 gram, potong dadu kecil –
- Bakso udang 150 gram, potong jadi 8 bagian –
- Udang kupas 150 gram, cincang kasar –
- Cumi–cumi 150 gram, iris kasar –
- Kecap asin 1 sdm –
- Saus tiram 1 sdm –
- Kecap ikan 1 sdm –
- Air kaldu udang 100 ml –
Cara membuat :
1. Taburan : Panaskan minyak sayur dan minyak wijen, tumis bawang putih, jahe dan serai hingga harum dan layu. Masukkan ikan, bakso, udang dan cumi – cumi. Masak kembali hingga seafood berubah warna. Tambahkan kecap asin, saus tiram dan kecap ikan, aduk rata. Tuangi air kaldu, masak hingga mendidih dan air habis. Angkat.
2. Campur air kaldu dengan garam, masak hingga mendidih. Masukkan beras, masak diatas api kecil sambil terus diaduk hingga menjadi bubur yang halus dan kental. Angkat dan sisihkan.
3. Masukkan bubur dalam mangkuk, beri 2 sdm taburan diatasnya.
4. Sajikan dengan bahan pelengkap.

Ingredients :
- Water beef broth 1 lt -
- Rice 100 gr, wash clean -
- Salam leaves 1 sheet -

- Bawang putih 3 siung, cincang –
- Merica bubuk ½ sdt –
- Kecap asin ½ sdt –
- Garam secukupnya –
- Jamur hioko 1 buah, rebus, iris tipis –
- Jamur merang 75 gram, potong kecil –
Taburan :
- Kulit pangsit, iris kecil bentuk segitiga, goreng –
- Abon daging sapi 100 gram –
Cara membuat :
1. Didihkan air kaldu, masukkan beras dan daun salam, masak hingga beras merekah. Tambahkan bawang dan bawang putih, masak hingga bubur mengental dan lembut.
2. Masukkan daging sapi, merica bubuk, kecap asin, jamur hioko dan jamur merang. Masak kembali sambil diaduk hingga mendidih dan jamur matang. Angkat.
3. Tuang bubur dalam mangkuk saji, tambahkan pangsit goreng dan abon. Sajikan.

ABON BEEF
Ingredients :
- Beef meat without fat and fiber, 1 kg, cut rough -
- Water 3 lt -
- 250 ml of coconut milk 1 clove coconut -

- Minyak goreng 500 ml –
Bumbu halus :
- Bawang merah 6 butir –
- Bawang putih 3 siung –
- Kunyit 2 cm, bakar –
- Air asam jawa 1 sdt –
- Cabai rawit 3 buah –
- Ketumbar ½ sdt –
- Gula merah secukupnya –
- Garam secukupnya –
Cara membuat :
1. Didihkan air dan garam. Masukkan daging sapi, masak hingga daging lunak. Angkat. Iris tipis daging dan pukul – pukul dengan alat pemukul daging hingga memar atau parut halus.
2. Panaskan 2 sdm minyak, tumis bumbu halus, daun salam dan lengkuas hingga harum.
3. Masukkan daging, aduk rata.
4. Tuang santan, masak dengan api kecil sambil terus diaduk dengan hingga kering.
5. Panaskan minyak, goreng adonan daging hingga kering. Angkat dan tiriskan.
6. Pres dan peras hingga minyaknya tiris. Pisahkan adonan abon dengan garpu agar tidak menggumpal. Sajikan.
Tips :
- Jika anda memiliki food processor, suwir – suwir daging dengan alat ini agar lebih praktis –
- Jika tidak suka pedas, jangan sertakan cabe rawit pada bumbu.

Ingredients :
- Young jackfruit (tewel) 3 kg, peeled and wash clean -
- Shrimp peeled 500 grams -
- Water lt 2 -

- 3 cloves garlic -
- Candlenut 4 grains -
- 2 cm turmeric, roasted -
- ½ tsp coriander -
- ¼ tsp caraway -

How to create:
1. Boil water. Enter the young jackfruit, cooked until soft. Lift and diperas.

Cara membuat :
1. Didihkan air. Masukkan Nangka muda, masak hingga lunak. Angkat dan peras.
2. Rebus udang hingga matang, angkat dan haluskan. Jangan buang air rebusannya.
3. Tumbuk nangka muda tapi jangan terlalu halus atau suwir–suwir.
4. Campur nangka muda dan udang, aduk rata dan sisihkan.
5. Panaskan 2 sdm minyak, tumis bumbu halus hingga harum.
6. Masukkan campuran nangka muda dan air rebusan udang. Masak dengan api kecil sambil diaduk hingga kering.
7. Panaskan minyak, goreng adonan nangka muda hingga kering. Angkat dan tiriskan.
8. Pres atau peras hingga minyaknya tiris. Sajikan.

3. Tumis bumbu halus dan lengkuas hingga harum.
4. Masukkan jantung pisang, aduk rata. Masak hingga bumbu meresap dan kering. Angkat.
5. Panaskan minyak, goreng jantung pisang hingga kuning kecoklatan. Angkat dan tiriskan.

Ingredients :

Bumbu Halus :
- Bawang merah 6 butir –
- Bawang putih 3 siung –
- Kunyit 1 cm, bakar –
- Ketumbar 1 sdt –
- Garam secukupnya –
- Gula merah secukupnya –
- Kaldu sapi bubuk 1 sdt –
- Air asam 1 sdt –
Cara membuat :
1. Didihkan air, rebus daging hingga lungak. Angkat. Sisihkan air kaldunya. Giling daging sapi dengan foot processor atau iris tipis, dan pukul hingga memar. Suwir – suwir daging
2. Parut lengkuas, kukus selama 30 menit. Pres atau peras airnya hingga tiris.
3. Angin – anginkan lengkuas atau oven dengan suhu rendah hingga kering.
4. Panaskan 2 sdm minyak, tumis bumbu halus dan daun salam hingga harum. Masukkan lengkuas dan daging sapi, aduk rata.
5. Tuang santan dan 150 ml air kaldu. Masak dengan api kecil sambil diaduk hingga kering. Angkat dan tirikan.
6. Pres dan peras hingga minyaknya tiris. Pisahkan adonan abon dengan garpu agar tidak menggumpal. Sajikan

- Dried shrimp 200 grams, soaked warm water, mashed -
- Cooking oil 250 ml -
Fine spices :
- 3 cloves garlic -

- Grated orange peel 1 tsp lemon -
- ½ tsp coriander -
- Brown sugar 1 tbsp -
- Salt -
How to prepare :
1. Heat 1 tbsp oil, pan until fragrant spices finely.
