PANGEK BRACKISH - Pangek Masin

Pangek Brackish

Ingredients :
- 1 whole tenggiri fish, cut -
- 3 grains of red onion, thinly sliced -
- 2 cm ginger, bruise -
- 1 sheet turmeric leaf, tied -
- 6 cayenne fruit intact -
- 2 tamarind fruit Kandis -
- 1 tsp salt -
- 1 tsp sugar -
- 500 l of coconut milk 1 / 2 grains coconut -
- 2 sprig basil, leaves taken-
- 1 / 4 tsp lime juice --
- 3 tbsp oil to stir fry --

Fine spices :
- 6 onion grains -
- 3 cloves garlic -
- 4 grains candlenut, fry without oil -
- 1 cm ginger -
- 2 cm turmeric, burned -
- 1 / 2 tsp pepper -

How to prepare :
1. Mix fish tengiri with 1 / 2 tsp salt and 1 tsp lime juice. Leave 10 minutes.
2. Heat oil. Stir fry onion, finely zest, ginger, turmeric leaf and cayenne pepper until fragrant.
3. Enter the coconut milk, tamarind kandis, salt and sugar. Cook until boiling.
4. Add fish tengiri. Cook until cooked. Enter the basil and lime juice. Cook until thick.

Pangek Masin

Bahan :
- 1 ekor ikan tenggiri, dipotong-potong -
- 3 butir bawang merah, diiris tipis -
- 2 cm lengkuas, dimemarkan -
- 1 lembar daun kunyit, diikat -
- 6 buah cabai rawit utuh -
- 2 buah asam kandis -
- 1 sdt garam -
- 1 sdt gula pasir -
- 500 l santan dari 1/2 butir kelapa -
- 2 tangkai kemangi, dipetiki -
- 1/4 sdt air jeruk nipis -
- 3 sdm minyak untuk menumis -

Bumbu halus :
- 6 butir bawang merah -
- 3 siung bawang putih -
- 4 butir kemiri, disangrai -
- 1 cm jahe -
- 2 cm kunyit, dibakar -
- 1/2 sdt merica -

Cara membuat :
1. Lumuri ikan tengiri dengan 1/2 sdt garam dan 1 sdt air jeruk nipis. Diamkan 10 menit.
2. Panaskan minyak. Tumis bawang merah, bumbu halus, lengkuas, daun kunyit dan cabai rawit sampai harum.
3. Masukkan santan, asam kandis, garam dan gula pasir. Masak sampai mendidih.
4. Tambahkan ikan tengiri. Masak sampai matang. Masukkan daun kemangi dan air jeruk nipis. Masak sampai kental.
