BLACK EGG SAUCE - Telur Kuah Hitam

Black Egg Sauce

Ingredients :
- 8 eggs boiled, fried -
- 3 pieces bay -
- 2 cm ginger, bruise -
- 2 pieces green chili, cut rounded 1 / 2 cm -
- 1 tbsp sweet soy sauce -
- 2 1 / 2 tsp salt -
- 1 tsp brown sugar -
- 800 ml of coconut milk 1 / 2 grains coconut -
- 2 tbsp oil for stir fry --

Fine spices :
- 3 pieces (60 grams) kluwak*, soaked in water -
- 6 onion grains -
- 3 cloves garlic -
- 3 grains candlenut, fry without oil --
- 1 tsp coriander -
- 1 / 2 tsp pepper -
- 1 / 4 tsp nutmeg -

Ingredients topping:
- 3 Leek stalk, cut -
- 4 tbsp fried onion -

How to prepare :
1. Heat oil. Stir fry fine spices, bay leaves, green chillies and ginger until fragrant.
2. Add eggs. Poke average. Enter a sweet soy sauce, salt and brown sugar. Poke average.
3. Add milk. Cook until cooked.
4. Serve with topping leek and fried onion.

To 8 portions.

Telur Kuah Hitam

Bahan :
- 8 butir telur rebus, digoreng -
- 3 lembar daun salam -
- 2 cm lengkuas, dimemarkan -
- 2 buah cabai hijau, dipotong bulat 1/2 cm -
- 1 sdm kecap manis -
- 2 1/2 sdt garam -
- 1 sdt gula merah -
- 800 ml santan dari 1/2 butir kelapa -
- 2 sdm minyak untuk menumis -

Bumbu halus :
- 3 buah (60 gram) kluwak, diseduh -
- 6 butir bawang merah -
- 3 siung bawang putih -
- 3 butir kemiri, disangrai -
- 1 sdt ketumbar -
- 1/2 sdt merica -
- 1/4 sdt pala -

Bahan taburan :
- 3 tangkai kucai, dipotong-potong -
- 4 sdm bawang goreng -

Cara membuat :
1. Panaskan minyak. Tumis bumbu halus, daun salam, lengkuas dan cabai hijau sampai harum.
2. Tambahkan telur. Aduk rata. Masukkan kecap manis, garam dan gula merah. Aduk rata.
3. Tuang santan. Masak sampai matang.
4. Sajikan dengan taburan kucai dan bawang goreng.

Untuk 8 porsi.
