GADO - GADO BETAWI

Gado - Gado Betawi

Ingredients :
- Long Beans, 250 grams, cut 4 cm, boiled, drained -
- 200 grams bean sprouts, clean, boiled, drained -
- Cabbage 200 grams, box cut, boiled, drained -
- 1 bunch Kangkung, clean, cut 4 cm, boiled, drained -
- 200 grams squash, cut ½ cm long, boiled, drained -
- Tempe 200 grams, cut -
- Tofu 2 pieces, pieces, dice -
- Boiled chicken eggs, grains 2 -
- Potato boiled 2 pieces -
- Lontong 3 fruit, cut -
- Fried onion , for sowing -
- Cooking oil 600 ml -
- Acid-bred 4 grains (soaked with water, take water) -
- 2 lime orange fruit, take water -
- Water 500 ml cooked -

Spices I:
- 4 cloves garlic, mashed -
- Coriander powder 1 spoon tsp -
- Salt -
- Water 200 ml -

Spices II:
- Peanut frying 250 grams -
- 3 cloves garlic -
- 3 red chili fruit -
- 4 cayenne fruit -
- Brown sugar 1 fruit, chopped -

How to prepare :
1. I mixed all the ingredients, soaked tempe, tofu, boiled eggs and boiled potatoes to it. Left for 15 minutes so that the flavor permeate.
2. Heat oil, fried tempe, tofu, boiled eggs and potatoes to tawny, but not too dry. Lift and drained,
3. Sauce: mashed II all ingredients, add water, tamarind water, lime water, poke the average,.
4. Arrange vegetables, lontong, know, eggs, potatoes and Tempe in food dishes. Serve with sauce gado - gado and fried onion topping. If the food can be given a new dressing on it and then be fried onion.

Gado – Gado Betawi

Bahan :
- Kacang panjang 250 gram, potong 4 cm, rebus, tiriskan –
- Taoge panjang 200 gram, siangi, rebus, tiriskan –
- Kol 200 gram, potong kotak, rebus, tiriskan –
- Kangkung 1 ikat, siangi, potong 4 cm, rebus, tiriskan –
- Labu siam 200 gram, potong panjang ½ cm, rebus, tiriskan –
- Tempe 200 gram, potong –
- Tahu 2 buah, potong dadu –
- Telur ayam rebus 2 butir –
- Kentang rebus 2 buah –
- Lontong 3 buah, potong –
- Bawang goreng seckupnya, untuk taburan –
- Minyak goreng 600 ml –
- Asam jawa 4 mata ( seduh dengan air, ambil airnya )
- Jeruk limau 2 buah, ambil airnya –
- Air matang 500 ml –

Bumbu I :
- Bawang putih 4 siung, haluskan –
- Ketumbar bubuk 1 sendok the –
- Garam secukupnya –
- Air 200 ml –

Bumbu II :
- Kacang Tanah goreng 250 gram –
- Bawang putih 3 siung -
- Cabai merah 3 buah –
- Cabai rawit 4 buah –
- Gula merah 1 buah, serut –

Cara membuat :
1. Campur semua bumbu I, rendam tempe, tahu, telur rebus dan kentang rebus ke dalamnya. Diamkan selama 15 menit agar bumbu meresap.
2. Pananskan minyak, goreng tempe, tahu, telur rebus dan kentang hingga kuning kecoklatan, tapi jangan terlalu kering. Angkat dan tiriskan,
3. Saus : Haluskan semua bumbu II, tambahkan air matang, air asam, air jeruk limau, aduk rata, sisihkan.
4. Susun sayuran, lontong , yahu, telur, tempe dan kentang dalam piring saji. Sajikan dengan saus gado – gado dan taburan bawang merah goreng. Jika segera di makan saus bisa dituang di atasnya baru kemudian ditaburi bawang merah goreng.
